Health inspectors typically visit restaurant and food service establishments twice a year, so restaurants must make sure their operations stay within health code regulations and requirements that vary state to state. Restaurants may be at risk for food safety violations if walk ins are not properly maintained and cleaned. The potential resulting fines and temporary shutdowns can mean disaster for both revenue and reputations.
To keep restaurants within health code guidelines, restaurants need to ensure that proper floor coatings are in place throughout the facility —including freezer areas. At Florock, we produce the walk-in resin floors cooler and freezer areas need.
As restaurant owners consider which flooring option will work best for their freezers and coolers, they can typically choose from seamless monolithic resinous flooring or traditional grouted tile floors. However, the latter option presents a number of serious concerns. For example, flooring with bumpy grout lines is hard to clean and sanitize. And porous, cementitious grout can absorb spilled food and liquids, creating unpleasant odors, while attracting pests and rodents—all of which make restaurants vulnerable to violations from health inspectors.
Because of the extreme temperatures inside walk in coolers and freezers, flooring with grout can also compromise the flooring structure over time. Tile and grout typically have different rates of expansion and contraction when exposed to temperature cycling, so when cleaners employ hot water or steam cleaning on cold floors, microcracks can develop between and within grout and tile. These fissures in the floor surface, while often not initially seen, allow moisture to enter and promote the growth of mold and bacteria.
As the water and microbes begin eating away at the flooring material, further degradation can occur, causing larger cracks, popping grout and other issues that compromise the freezer flooring. To prevent any issues with walk-in cooler flooring, a better option is to have resinous floor coatings installed. These virtually seamless, grout-free floors are a highly sanitary option.
